About

Between Paris and Aubervilliers, amidst Rudy Ricciotti's architectural creation, le Café du 19M provides a local eatery at lunchtime and a coffee shop all day long.

Since September, a new energy has taken hold in the kitchen with the arrival of chef Victor Legrand, a master of long-fermented artisanal pizza dough and an expert at sourcing exceptional produce.

le Café du 19M was conceived by Grand Cuisine, an agency specialising in avant-garde food performance. Since its inception, Patricia Meunier and Mat Gallet have been at the helm of the project, selecting chefs, managing operations, designing menus, sourcing ingredients, and overseeing day-to-day operations.

In September 2025, the duo handed over the kitchen to Victor Legrand (aka Vico's Dough), who had recently arrived in Paris with a reputation for his cutting-edge collaborations.

His signature? Dough. Long fermentation, light textures, easily digestible—an approach that celebrates contemporary pizza.

Together with Orianna Cosme Clavreul, who was already established at the Café, he has created a menu focused on seasonal pizza and vegetables.
